Editor Sougata Mukherjee welcomed my thoughts and contributions to the article, alongside my industry colleagues Amber Moshakos (LM Restaurants) and Katsuji Tanabe (High Horse Restaurant), paired with USDA and US Bureau of Labor Statistics, to illustrate just how much our industry impacts our local economy and our questions as operators about how we’ll continue to persevere during this time.
